Sweet botifarra sausage is a peculiar traditional product, halfway between candy and cured meat. The name “Dulses” — between “dolces” (Catalan) and “dulces” (Spanish) —, as our grandparents used to call these treats for people with a sweet tooth, and the sugar-sweet appearance give us a well-humoured clue to the essence of this product from the Empordà region.
