In the past, a strange character occasionally wandered around the wine cellars. He would open his briefcase and, like an alchemist, would begin to fiddle with potions and test tubes. They called him the Chemist. Today, this figure is more familiar and can be found in any wine cellar, but is now known as the oenologist. They originate from microclimates and are produced in a microvinification plant. They are not microbes, but Micro Wines, a series of monovarietal wines made from autochthonous grape varieties grown in vineyards with unique characteristics. They are produced in small volumes in carefully controlled conditions.
